Practice.. I need practice

I made my first cake a few months ago when I bought two six inch pans.  As with bread, even the failures are pretty good.  This is one.  I had too much batter and overfilled the pans rather than making a few cupcakes to use up the excess.  So the cake is too dense and rose into crowns that had to be cut off.  Really it was a mess.  But it is a very tasty mess.

Cream cheese/butter icing goes a long ways to fix problems.  Even a six inch cake will last me a week.  There's a lot of cake there.

I never knew how much I liked spice cake.  Now I just need to get it right.
