Brisket

Sheltering at home is pretty much my life anyway so I'm not shaken by events.  We managed to stock up and I'm actually on an Amazon subscription for toilet paper and paper towels and the next delivery is today.  So I'm on to better things.

Got the fire going early so it will make a consistent bed of coals.

And the brisket - this is half of one.. the other half is in the freezer

On the grill with its pan of water - now I won't see it again for maybe six hours

I can just make out the thermometers on the cooker in my Nest cam... so I can monitor without having to be there every minute...

It will take all day and I might move it inside in the oven for the last few hours.  Brisket is expensive in the barbecue restaurants for just this reason.  But I have a cooker and wood is pretty cheap so it is a perfect shelter in place kind of job!
